i made this up yesterday as a midmorning snack/part two of my breakfast once my smoothie digested. there must have been chia in the air, because then i saw that JL has mentioned on facebook that she was possibly one of the chia-fearing folk & linked up to gena's blog choosing raw for a whole series of pudding recipes including one for strawberry ginger chia pudding. yum!
this pudding has a texture that others have compared to tapioca, but seeing as i don't think i've ever had tapioca, i can't confirm. but i can confirm this to be a healthy sweet treat perfect for just about any time of day.
vanilla chia pudding with seeds & goji berries
makes 1 serving
2 tbsp chia seeds
3/4 cup almond milk
1/4 tsp pure vanilla extract
6-8 drops nunaturals vanilla stevia
{or replace with any other sweetener to taste: agave, maple syrup, etc}
1 tbsp raw pumpkin seeds
1 tbsp raw sunflower seeds
1 tbsp goji berries
whisk together the chia, milk, vanilla & sweetener and set aside for 30 minutes or more*. top with seeds & goji berries. eat pudding. i've been enjoying this as a mid morning snack but it's also a nice after dinner dessert. or breakfast. or afternoon snack.
phew - that's 2 lessons learned in 2 days. not bad 2012, not bad at all....

ReplyDeleteI had chia pudding for breakfast today - such an easy, quick breakfast - except for the sitting part. If you put it in a mason jar or tupperware, it can soak on your way to work though!
ReplyDeleteSo many people talking about chia pudding lately!! It was going to be my first breakfast after my little juice fast, but since my Vita is coming in the mail I think I have to make a smoothie. Soon though, I will rekindle my chia pudding love!
ReplyDeleteI misread the title and thought it said Vanilla "Chai" Pudding which sounded amazing. But after rereading and learning it was a "Chia" pudding I super excited. I love me a chia pudding (but you're right...just not before running I learned the hard way too)
ReplyDeleteI have yet to make it myself, but have eaten it at raw potlucks. I LOVE chia pudding! The texture is amazing, and I love that it's so versatile. You can add all kinds of flavours to it :)

ReplyDeletefrom the pictures it does look like tapioca.. the small tapioca pearls get all gelatinous and full too. as i was writing this comment i remembered an indian dessert called falooda, and i looked up the hindi name for chia.. and someone apparently says that the sabja seeds in falooda are chia.. i am intrigued.. i need to verify this..coz then that would mean i already ate a bunch of chia while growing up!

ReplyDeleteJust so you know, I have finally been able to cross off chia seed pudding on my "things to finally try" list. And let me tell, I love it! I put a tsp raw cacao powder in, slice up some almonds and a banana, drizzle some agave and I am in HEAVEN. I thank you every morning I make this for inspiring me to finally try it.
